Homemade Flour Tortillas

This is one of my favorite recipes. I make them about once a week. It’s quick and easy, and makes a can of refried beans feel like a meal! Or, throw some steak on the grill and sautee some onions and peppers and you have fajitas in no time.  Here’s the recipe:

  • 2 c all-purpose flour
  • 3/4 tsp baking powder
  • 3/4 tsp salt
  • 1/4 c shortening
  • 3/4 c warm water

 

Mix flour, salt and baking powder in medium-sized bowl. Cut in shortening. Make a well in the center and add water. Mix in with a fork. Knead 10 times. Cover and let rest for 10 minutes. Divide into approximately eight balls (about the size of a golf ball). Roll out on a lightly floured surface (to make them more evenly shaped, always roll from the center out to the sides of the tortilla). Cook over medium heat in a saute pan or on a griddle. Enjoy! This recipe is easily doubled, but remember they don’t last as long as the store bought ones – only a few days. You can keep the dough in the refrigerator for about two days (wrap it tightly in plastic wrap or put in a ziploc bag). Store leftover tortillas in the fridge too! Enjoy!
