Yay for Beignets!
For Father’s Day I tried my hand at making Beignets (pronounced Ben-Yay), which are little French donuts that are generally square or triangle shaped and covered in powdered sugar. They turned out pretty good – I mean they were no Cafe Du Monde beignets, but we haven’t been to New Orleans in 7 years, so our memories are a bit hazy anyway.
My biggest problem was that I put too much oil in the pan, so it took a long time to heat up and almost made us late for church. I used this recipe in case you want to try it (I substituted part heavy cream and part whole milk for the evaporated milk because I didn’t have any evaporated milk). Next time I will probably try this Paula Deen recipe just to compare.
It was really nice that I was able to make the dough the night before and leave it in the refrigerator overnight. It made the morning run much more smoothly! I still have some dough left, and since the recipe says it can keep up to a week in the fridge, I’m going to try frying some up tomorrow to see how they turn out. (I love things that you can make several days ahead because I always find myself with way too many things to do the day before a party or event.)
