Half Birthdays and Cinco de Mayo

In our family, we celebrate half birthdays.  It’s a tradition that my mom started when we were little.  You get to pick a special meal and you get one present.  I really like carrying on the tradition because my kids all have birthdays right before Christmas.  It makes it difficult to make their birthdays really special (especially poor Josh, whose birthday is two weeks before Christmas).  So, this way they get to have a little mini-party right before summer.

My half birthday falls on Cinco de Mayo, so we usually go out to dinner for some yummy Mexican food.  Today I’ll be cooking, so I’m looking for good recipes.  I think I might try making these fish tacos from Our Best Bites.  Don’t they look delicious?

    Yum! I LOVE your new blog! It is fun to read things you are doing… and hard because if I was still there, I’d be doing some of them with you! I made fish tacos on Thursday and grilled mahi mahi and then used the Cafe Rio dressing found in the Best Bites cookbook. Have you got the book yet? So delicious! And did you make the full size of Chipotle guacamole or the smaller version? 😉

    That sounds so good! I still need to get the cookbook, but I love the website. Ha Ha! We made the small version. 48 avocadoes…I can’t even imagine! I wish you were here too!
